Mild Lentil and Tomato Stew

Mild Lentil and Tomato StewThis Mild Lentil and Tomato Stew is a vegetarian stew that is very substantial and filling, without being fattening at all. It is perfect for a cold or rainy day and is similar to this red lentil and potato bake, except a bit spicier.

Cardamom is a zesty Indian spice that you can buy at your local Indian grocery store. Since cardamom tastes slightly like lemon, it goes very well with the lemon juice. Both the cardamom and lemon juice are added at the very end as a final touch.

Ingredients:

  • 800g Lentils
  • 2 litres Water
  • 1/4tsp Cumin seeds
  • 1/4tsp Coriander seeds
  • 1 large Onion, chopped
  • 3 cloves Garlic, chopped
  • ½tbsp Turmeric
  • 1/2tbsp Ginger powder
  • 5 large Tomatoes
  • 1/2tsp Cayenne pepper
  • 1tbs Paprika
  • 1 clove Cardamom, ground
  • 3tbs Lemon Juice
  • 5tbs Olive Oil

Preparation Method:

  1. Wash the lentils thoroughly and put them in a bowl. Cover the lentils and leave them to soak for at least 8 hours, or overnight.
  2. Drain the lentils and put them in a pot with 2 litres of water. Heat them until they come to the boil, then lower the flame and leave them to simmer for 30 minutes.
  3. Heat up the olive oil in a pan. Once small bubbles start to form in the oil, it is hot enough to begin frying the spices.
  4. Now add the cumin seeds and coriander seeds. You should not grind them beforehand. Careful! They will start to pop and crackle. You should not be wearing short sleeves when you do this, as you will get burnt.
  5. Chop the onion and garlic very finely.
  6. Add the onion and garlic to the pan. With the flame on low, stir briskly. Fry these ingredients for about 4 minutes.
  7. Add in the turmeric and ginger powder and stir briskly.
  8. Mince the 5 large tomatoes very finely.
  9. Add the minced tomatoes to the pan and stir them well.
  10. Add the cayenne pepper and paprika and stir.
  11. Gently put this mixture into the pot where the lentils are and stir thoroughly. Let the lentils and the tomato mixture simmer on low heat for 5 minutes.
  12. Grind 1 clove of cardamom with a pestle and mortar. Slowly sprinkle the ground cardamom in.
  13. Stir in the lemon juice.
  14. Let simmer for 5 more minutes.
  15. Serve hot.

Makes: Enough for 10 servings
Takes: 1 hour (plus 8 hours soaking time)

Dum Aloo

Dum AlooDum Aloo is a delicious vegetarian potato dish. It consists of fried potatoes in a thick yoghurt gravy. Since Dum Aloo is a lot like a potato stew,  (try this red lentil and potato bake recipe), it is rather substantial and filling, so it makes for a great veggie meal.

This potato dish goes well with naan bread or even with rice. When preparing this recipe, be careful not to add too much ginger, or it will overpower the entire dish.

The potatoes and yoghurt gravy can be garnished with chopped coriander leaves. This will give the dish a lovely refreshing touch.

Ingredients:

  • 10 small potatoes
  • 4 onions
  • 3tbsp ghee
  • 4 curry leaves
  • 2 bay leaves
  • 1tsp ginger powder
  • 1/2tsp red chilli powder
  • 2tsp coriander powder
  • 1tsp cumin powder
  • 250ml yoghurt
  • Pinch of salt to taste
  • 1/2tsp garam masala powder
  • vegetable oil to deep fry the potatoes
  • 10g fresh coriander

Preparation Method:

  1. Boil the potatoes. (This will cut down on the amount of time you need to fry them later, so it will be less fattening.) Drain them and wait for them to cool before  peeling and cutting them in half.
  2. Fill a pot with vegetable oil and warm it up on high heat.
  3. Once the oil is hot enough, slowly add in the potatoes. Deep fry them until they turn light brown.
  4. Remove the potatoes and set them aside.
  5. Chop the onions very finely. They should be almost minced.
  6. In a pot, heat up the ghee.
  7. Now add the onions and fry them until they are light brown.
  8. Lower the flame. Add the curry leaves and bay leaves to the pan and continue frying.
  9. Now add the ginger powder to the pan and continue frying on a low flame while stirring slowly. Be careful not to let anything get burnt.
  10. Stir in the red chilli powder, coriander powder and cumin powder.
  11. Slowly stir in the yoghurt.
  12. Add the salt.
  13. Now slowly add in the fried potatoes.
  14. Stir in the garam masala powder.
  15. Cover the pot and let this simmer for about 15 minutes on a low flame, stirring occasionally. You will see the gravy get thicker.
  16. Serve hot and garnish the Dum Aloo with chopped cilantro leaves.

Takes: 1 hour
Makes: Enough for 4 servings

Sweet Gulab Jamoon

Sweet Gulab JamoonGulab Jamoon is a delicious Indian dessert. It consists of deep fried balls of dough, called jamoons, in a sugary syrup. Gulab Jamoon was served at all my cousins’ weddings. In fact, it is one of the most typical desserts served at traditional Indian weddings, and one of my very favourites of all sweets.

These days, gulab jamoon powder is internationally available, so it’s not difficult to find and pepare; however,  it takes a little more time compared to other desserts as it sometimes requires being dipped in sugar syrup for whole night. The texture resembles the liqueur syrup-saturated French cake Baba au Rhum.

They also remind me a bit of doughnuts. Speaking of, did you know that May 12th through May 19th is national doughnut week? Maybe you should try this recipe to celebrate!

The term gulab jamoon comes from Persia, and it means “rose water”, referring to its rosewater-scented syrup. This very tasty dessert is often eaten at important celebrations, like weddings, but also commonly enjoyed at Diwali (the Indian festival of light) and the Muslim celebrations of Eid ul-Fitr and Eid al-Adha.

There are lots of varieties when it comes to gulab jamoon, and each one has its one appearance and special taste. You can eat them cold, but our favourite way to enjoy gulab jamoon is to warm them a bit before serving. It adds another dimension to the dish;  it’s perfect for special occasions when you want something more exotic than cake.

I got this recipe from my aunt, who really knows how to make tasty sweets.

Gulab Jamoon is a delicious Indian dessert.
Ingredients
  • 250ml Water
  • 250g Sugar
  • 500ml Khoya
  • 125g Flour
  • ¼tsp Baking Soda
  • 1 pinch of Saffron, crushed
  • ½tsp. Cardamom Powder
  • 125ml Milk
  • 900ml Vegetable Oil for deep frying
Instructions
  1. To make the syrup, combine the water and sugar in a large pot and let simmer while you are preparing the jamoons.
  2. To make the balls of dough, start by crumbling the khoya into a large bowl.
  3. Add in the flour and baking soda. Mix these ingredients together.
  4. Sprinkle in the pinch of crushed saffron and cardamom powder.
  5. Knead these ingredients to form dough. Slowly add in the milk as you are kneading. Only use as much milk as you need to make the dough soft. You might not need as much as 125ml.
  6. Take a small bit of dough in your hands and roll it into a perfectly round little ball. There should be enough to make 30 balls.
  7. Put these balls on a plate and cover them with a slightly damp kitchen towel. Let them sit for up to 10 minutes.
  8. Heat up the vegetable oil until it is very hot. (You may substitute ghee for vegetable oil). Then lower to the lowest flame.
  9. Slowly drop in the balls of dough. Be careful not to burn yourself. These balls will rise to the top of the oil. Let them fry until they are light brown.
  10. Remove the balls from the hot oil and leave them aside on a paper towel. Let the oil drain off them.
  11. Now add them to the syrup, which should be still simmering in the pot. Cover the pot and let simmer for 1 hour, then turn off the flame. My aunt then lets them soak in the syrup overnight. If you have time for this, it will give the balls a much sweeter flavour.
  12. Serve in a dish with plenty of syrup and perhaps a bit of icing sugar!

Tangy Red Daal

Tangy Red DaalWhen I was younger, my friends would complain that their mums always cooked the same things. One schoolmate ate a roast sandwich for lunch every day. Another girlfriend of mine confided in me that in her house, each day had an assigned dish: Mondays were for fish and chips, Tuesdays were bangers and mash, etc.

 

In my family, we ate a lot of Daal, the Indian word for lentils, but I never complained! There are four different types of lentils, and each can be prepared in many ways with a variety of flavours. This was useful for my Mum who tried to vary our menu.

I like my Daal spicy, but I tend to tone it down a bit when cooking for friends. Out of the many lentil recipes that I enjoy, I want to share this Tangy Red Daal with you. It isn’t quite as soupy as this hearty lentil and herb soup, but it is nice served with a bit of rice. I call it tangy because it has a bit of a kick, but it doesn’t sting your tastebuds, as other recipes might.

Ingredients:

  • 200g red lentils
  • 10g ginger
  • 5g mustard seeds
  • 10g fresh coriander, chopped
  • 3 tomatoes
  • 3 onions
  • 1 jalapeño pepper
  • 1 green bell pepper
  • 5g ground cumin
  • 5g cayenne pepper
  • 6 cloves garlic
  • 30ml olive oil
  • 250ml water
  • salt and pepper
Preparation Method:
  1. Sort the red lentils on a white counter or table cloth to pick out any rocks or small pieces of dirt mixed in.
  2. When finished, rinse in cold water. Bring water to the boil and add lentils. Semi-cover and let cook for 35 minutes or so until the lentils are soft.
  3. Meanwhile, chop the onions, jalapeño pepper, garlic, ginger, bell pepper and tomatoes.
  4. In a large frying pan, heat the oil and add the onion, garlic, ginger and peppers. Sauté for 5 to 7 minutes until onions are translucent and garlic is soft.
  5. Add the cumin and cayenne pepper. Stir.
  6. Add the tomatoes and keep stirring for another 6 minutes or so until the tomatoes are fairly well-cooked.
  7. Transfer the vegetables into a big pot and add just enough hot water to cover the contents of the pot. Let boil for 6 minutes and then add the cooked lentils, stirring well.
  8. Add salt and coriander to taste.
  9. Pour into a bowl and garnish with coriander. Serve warm.

Serves: 6
