Gooseberry and Almond Cupcakes

Serves: 24-30 cupcakes
- 250g self-raising flour
- 250g butter
- 200g fresh gooseberries, washed and quartered
- 165g powdered or icing sugar
- 120g powered almonds
- 5 egg whites
- Mix together the sugar, flour and powdered almonds in a bowl.
- Soften the butter on a low heat and add to the mixture, stirring until smooth.
- Beat the egg whites until fluffy peaks form and then fold carefully into the mixture.
- Add the quartered gooseberries and mix in.
- Spoon the mixture into cupcake cases and bake in a preheated oven (180ยบ) for about 20-25 mins or until golden and well risen.
- Remove from oven and leave to cool completely.
- Sprinkle each cupcake with a little icing sugar before serving.
