Sour Cherry Soup

 

 

There are two kinds of fruits that my three years old daughter loves to eat: cranberries and sour cherries. One very popular dish in Hungary is Sour Cherry Soup – typically served cold in the summer and in winter, I use canned sour cherry and serve at room temperature. Try this recipe, I find it’s really easy and so delicious.

It is really easy to make.
Ingredients
  • 500 g sour cherries, pitted
  • 5 cups of water
  • ¾ cup granulated sugar
  • Small pieces if cinnamon sticks
  • 2-3 cloves
  • 2 tablespoon flour
  • 2 dl sour cream
Instructions
  1. Cook the washed and pitted cherries along with the sugar, cinnamon sticks and cloves in the water for 15 minutes.
  2. Meanwhile, mix sour cream and flour in a bowl.
  3. When the cherries are nearly tender, remove the cinnamon sticks and cloves.
  4. Thicken the soup with the mixture of sour cream and flour and simmer for about 10 minutes.
  5. In summer, leave to cool and then put in the fridge for one hour before serving.
